Ugali (or pap, sadza, nsima) is the cornerstone starch - white maize meal cooked to thick porridge. Eaten with hands, used to scoop relishes, stews, and meats.
Bring water to boil. Gradually add maize meal.
Stir vigorously to prevent lumps.
Reduce heat. Keep stirring 15-20 mins until thick.
When it pulls away from pot, it's ready.
Form into balls. Serve with relish or stew.
