Bobotie is spiced minced meat (often lamb) sweetened with apricots, topped with egg-milk custard, baked golden. Cape Malay heritage. Served with yellow rice.
Soak bread in milk. Sauté onion, add meat, curry.
Add jam, soaked bread. Bake 20 mins at 350°F.
Mix eggs and milk. Pour over. Add bay leaves.
Bake 25 mins until custard set.
Serve with yellow rice and chutney.
