Yassa is a Casamance specialty - chicken or fish marinated in onions, lime, vinegar, mustard. Grilled then cooked in the caramelized onion marinade. Tangy and unforgettable.
Marinate chicken in onions, lime, vinegar, mustard 4+ hours.
Remove chicken, grill or broil until browned.
In pot, cook marinade onions until caramelized.
Add chicken, stock. Simmer 30 mins.
Serve over rice with onion sauce.
