Thieboudienne (ceebu jen) is Senegal's iconic one-pot - fish, rice, tomato sauce, and vegetables. Invented by Penda Mbaye, it's the dish of sharing and celebration.
Season and fry fish. Set aside. Make tomato-onion sauce.
Add vegetables to sauce. Cook until tender.
Remove vegetables. Add rice to sauce, more water.
Cook rice. Layer fish and vegetables on top to reheat.
Serve in communal platter.
