Pounded yam (iyan) is white yam boiled and pounded until smooth and stretchy. The most prized swallow, served with the finest soups. Requires strength to make properly.
Peel yam, cut into chunks. Boil until very soft.
Drain. Pound in mortar with pestle.
Add hot water gradually while pounding.
Pound until smooth, stretchy, no lumps.
Form into smooth balls. Serve with soup.
