Couscous is semolina steamed to fluffy grains. Served with meats, vegetables, stews. The center of Maghrebi dining.
Bring water/stock to boil with salt and butter.
Add couscous. Cover, remove from heat.
Let stand 5 mins. Fluff with fork.
For traditional: steam over stew 2-3 times.
Serve with tagine or stew.
