Jamaican Rice and Peas uses kidney beans in coconut milk with thyme and scotch bonnet. The essential Sunday dinner side - pairs with jerk chicken or curry goat.
Soak beans overnight. Boil until tender. Reserve liquid.
Combine coconut milk, 2 cups water, thyme, scallions, garlic.
Add whole scotch bonnet (don't burst). Bring to boil.
Add rice and beans. Stir once. Cover, low heat 20-25 mins.
Remove aromatics. Fluff and serve.
