Waakye is Ghana's beloved street food - rice and black-eyed peas with dried sorghum leaves giving reddish-brown color. Served with shito, spaghetti, fried plantains.
Soak beans overnight. Wrap waakye leaves in cheesecloth.
Boil beans with leaf bundle and baking soda 30-40 mins.
Add rinsed rice. Add water to cover by 1 inch.
Cook 25-30 mins until rice and beans tender.
Remove leaves. Serve with shito, plantains, eggs.
