Groundnut (peanut) soup is a West African classic - creamy, nutty, and rich. Made with ground peanuts, tomatoes, and often chicken or beef. Served with fufu, rice balls, or banku.
Cook chicken with onions, salt until tender. Reserve stock.
Blend tomatoes and peppers. Sauté with tomato paste.
Add peanut butter, stir until smooth. Add chicken stock.
Simmer 20 mins. Add chicken, spinach. Cook 5 mins.
Serve with fufu or rice balls.
