Fufu is the foundational swallow of West and Central Africa. Made from cassava, plantains, or yams - boiled and pounded until smooth and stretchy. Served with rich soups.
Cut cassava and plantains into chunks. Boil until very tender.
Drain, reserve some cooking water.
Pound in mortar with pestle until smooth and elastic.
Add hot water as needed for right consistency.
Form into smooth balls. Serve with soup of choice.
